Winemakers Notes: The 2007 Chardonnay is a continuation of our efforts to discover and achieve the highest level of quality for the San Joaquin Valley- specifically Madera. The 2007 Chardonnay was 100% stainless steel fermented for 26 days at 68 degrees Fahrenheit. During primary fermentation the lees are stirred daily to achieve a full and complex mouth feel. Moreover, the wine was fermented with a dynamic matrix of French and American staves that enhanced varietal characteristics.
